I use cauliflower rice, but sometimes I just eat the stir-fry straight from the pan. Another personal favorite is zucchini noodles tossed with basil pesto and grilled shrimp; it feels restaurant-quality but is easy enough for a weeknight. And when I’m craving comfort food, I’ll make stuffed bell peppers with ground turkey, tomato, and melty cheese. I always add fresh basil or a squeeze of lemon to brighten things up.
