First of all, you will have to cut the pork and kimchi into bite sizes. Also, take onions and scallions to thinly slice them.
Now, take a large mixing bowl. Add kimchi, pork, scallions, onion, sesame seeds, grated ginger, minced garlic, sugar, sesame oil, soy sauce, gochujang, and black pepper as well. Mix everything appropriately and marinate this mixture for 1 hour. Or you keep it overnight to allow flavors to develop more and the meat to become more tender. But if you are in a hurry, let it stand for about 15 - 20 minutes.
Next, take a medium size pot and add 4 cups of water. Bring it to a good boil at a high flame.
Cut the tofu into two blocks precisely. Reduce the high heat to medium heat and add the tofu to the boiling water.
Gently give it a boil for up to 5 minutes. Now, with the utmost care, transfer the tofu to a colander in order to drain. Plus, cut each tofu block into ½ inch thick slices.
Next step is to take a large pan and place it over medium heat. Add kimchi and pork mixture into the pan.
Cook properly until the kimchi becomes soft, the pork is cooked nicely, and most of the liquid produced at the time of cooking is evaporated. It would not take more than 5 - 6 minutes.
Arrange the tofu slices in a circular shape on the plate & leave an open space in the middle portion.
Lastly, place the stir-fried kimchi and pork mix in the middle of the plate and serve well.
