Dubu (Tofu) Kimchi Recipe

Dubu kimchi is a classic Korean snack that is extremely easy to cook at home with the perfect ingredients.

Ingredients
  

  • 2 Cups Kimchi Completely Fermented
  • ½ Pound Pork Thinly Sliced
  • 1 Pound Tofu
  • ½ Onion
  • 2 Scallions
  • 1 tsp Sesame Seeds
  • 1 tsp Grated Ginger
  • 1 tbsp Minced Garlic
  • 1 tbsp Sugar
  • 1 tbsp Sesame Oil
  • 1 tbsp Soy Sauce
  • 2 - 3 tbsp Gochujang Korean Red Chilli Pepper Paste
  • A Pinch Of Black Pepper
  • 4 Cups Of Water Normal

Instructions
 

  • First of all, you will have to cut the pork and kimchi into bite sizes. Also, take onions and scallions to thinly slice them.
  • Now, take a large mixing bowl. Add kimchi, pork, scallions, onion, sesame seeds, grated ginger, minced garlic, sugar, sesame oil, soy sauce, gochujang, and black pepper as well. Mix everything appropriately and marinate this mixture for 1 hour. Or you keep it overnight to allow flavors to develop more and the meat to become more tender. But if you are in a hurry, let it stand for about 15 - 20 minutes.
  • Next, take a medium size pot and add 4 cups of water. Bring it to a good boil at a high flame.
  • Cut the tofu into two blocks precisely. Reduce the high heat to medium heat and add the tofu to the boiling water.
  • Gently give it a boil for up to 5 minutes. Now, with the utmost care, transfer the tofu to a colander in order to drain. Plus, cut each tofu block into ½ inch thick slices.
  • Next step is to take a large pan and place it over medium heat. Add kimchi and pork mixture into the pan.
  • Cook properly until the kimchi becomes soft, the pork is cooked nicely, and most of the liquid produced at the time of cooking is evaporated. It would not take more than 5 - 6 minutes.
  • Arrange the tofu slices in a circular shape on the plate & leave an open space in the middle portion.
  • Lastly, place the stir-fried kimchi and pork mix in the middle of the plate and serve well.

Notes

  • You can lightly press the boiled tofu to remove the excess water.
  • Ensuring the utilization of good quality kimchi that is well-fermented will add more depth and complexity of flavor to the dish.
  • Using a combination of different types of kimchi, such as radish kimchi, cabbage kimchi, and cucumber kimchi. It will add more complexity and flavor to the dish.
  • Always use fresh and high-quality ingredients such as fresh ginger & scallions, which will make the dish taste better and more flavorful.
  • Depending on your preference, you can adjust the spiciness level by adding more or less gochujang or black pepper.
  • For preparing the best dubu kimchi, always go for firm tofu. Extremely soft tofu tends to break apart during the boiling process.
  • You can also serve the stir-fried kimchi & pork mix and tofu side by side.
  • If you want, you can simply pass over the pork to create a meatless dish for vegetarians.
  • If you like your tofu to be soft enough, opt for boiling it. Otherwise, you can even pan-fry it, as it will become a little crispy from the outside. It's totally your choice.
  • You can reheat dubu kimchi in a microwave.
  • Dubu kimchi can be served without any alcoholic beverage. Yes, you can serve it as a side dish with a bowl of rice or enjoy it just like that.
  • Besides that, you can also add vegetables such as sliced mushrooms, carrots, or zucchini to the stew to increase the nutritional value and enhance the texture of the dish.
  • Adding seafood like clams or shrimp is also a good option to enhance the overall taste of dubu kimchi.
  • If you want to make this dish more fulfilling and satisfying, try adding noodles such as ramen, udon, or glass noodles.
  • Eggs can also be added to the stew in order to give it a rich or creamy texture. You can either crack open the edges directly to the stew or even poach them separately and then add it to the dish before serving.
  • Garnish with fresh herbs. Adding some fresh parsley or cilantro on top of the dish before serving can add an extreme level of freshness and brightness to the dish.
