There's a reason why the mojito is a classic drink. In the peak of summer, the blackberry mojito recipe is a fantastic way to use fresh blackberries and mint.

- 8-10 Fresh blackberries
- 6-8 Fresh mint leaves
- 1 tbsp Fresh lime juice
- 1-2 tbsp Simple syrup or Sugar
- 1-2 tbsp Club soda
- 6-8 Ice cubes
Muddle the blackberries and mint leaves in a cocktail shaker until well combined.
Add the lime juice, simple syrup to the shaker and fill it with ice.
Shake well until chilled and strain into a glass filled with ice.
Top with club soda and garnish with extra mint leaves and blackberries.
- Use fresh blackberries and mint leaves for the best flavor.
- If you don't have simple syrup, you can make your own by dissolving equal parts of sugar and water in a pan over low heat until the sugar has completely dissolved. Let it cool before using.
- To make a non-alcoholic version, omit the rum and add more club soda, or you can use a sprite.
