Pineapple Mojito Recipe

Enjoy a Fresh Pineapple Mojito made from club soda, lime, mint leaves, and pineapple juice. This summer-like tropical cocktail is easy to make.

- 5-6 Fresh Mint Leaves
- 1 tbsp sugar
- 2 tbsp Lime Juice
- ¾ cup Pineapple juice
- ¾ cup Club Soda or Sparkling Water
- 4-5 ice cubes
- 2-3 lime wedges optional
Muddle the mint, sugar, and lime juice/wedges in a cocktail shaker for about 15 seconds. If using whole lime wedges, squeeze out as much juice as possible. Wait a few minutes to let the sugar dissolve.
Fill the cocktail shaker halfway with ice, add the pineapple juice, and vigorously mix for 10-15 seconds.
Pour into an ice-filled highball glass, then top with club soda. Garnish with a wedge of lime and fresh mint (optional).
- If you don't have a muddler, a wooden spoon will suffice.
- Grilling the pineapple before adding it to the Mojito brings out the richness of the pineapple and provides a great smokey flavor!
- Serving this during a dinner/cocktail party? Multiply the proportions of each ingredient to make the appropriate amount and refrigerate in a pitcher until ready to serve. Just before serving, add the sparkling wine/club soda.
- When making your drink, chill your cocktail glasses in the freezer to keep them extra chilled while sipping.
