Sujeonggwa is the yummiest dessert drink, which is dark reddish brown in color. A traditional Korean beverage, easy to make & perfect for your gatherings.

Ingredients
  

  • 70 g Cinnamon Sticks About 2.5 ounces -Rinsed Properly
  • 100 g Ginger About 3.5 ounces - Peeled & Thinly Chopped
  • 2 & ½ Cup Brown Sugar Raw Sugar Or Honey - Optional
  • 22 Cups Of Water

For Garnishing

  • Dried Persimmon Optional
  • Pine Nuts Optional
  • Dried Jujube Optional

Instructions
 

  • Take a large saucepan and add 11 cups of water & ginger into it. Close the lid and let it boil on medium heat for 30 - 40 minutes.
  • At the same time, take another large saucepan, and add 11 cups of water & cinnamon sticks into it. Now, close the lid to let it boil for 30 - 40 minutes.
  • After 30 - 40 minutes, you need to take another large saucepan. This should be large enough to contain combined boiled water from the other two saucepans.
  • Next, drain the cinnamon & ginger using a sieve and add both the boiled to the third saucepan. Add brown sugar and allow it to boil for 10 - 20 minutes on medium to high heat. The sugar should completely dissolve in the water.
  • Let it cool down for some time before serving. Or you can cool it down by placing it in your refrigerator for 20 to 30 minutes.
  • When you feel it's cool enough, you can garnish it with jujubes, pine nuts, or dried persimmon. Serve it and enjoy this unique yet delicious drink.

Notes

  • It is guessed to boil ginger and cinnamon sticks in different saucepans so that their flavor comes out individually to slice up the drink. If they are boiled together, their flavors might get muddled or diluted which leads to low aromatic flavor and a failure of their medicinal properties. 
  • You can adjust the quantity of brown sugar in accordance with your taste. 
  • You can use white sugar in case brown sugar is not available. 
  • For a more refreshing & cold punch experience, try adding a few ice cubes to the Korean cinnamon punch.
  • If you use dried persimmon for garnishing your dessert drink, then it is suggested to soak it in the drink for 40 - 60 minutes beforehand to make it soft and infuse its flavor into the drink. 
  • To store Sujeonggwa, let the drink cool down and then, pour it into an airtight container. You can keep your drink in the refrigerator for about 2 weeks.
