Jujube Tea Recipe (Daechu-Saenggang Cha)

Jujube tea, a traditional Korean tea, is soothing and calming, which is health-promoting, and caffeine free made with red dates, ginger, and cinnamon.

Equipment

  • Sharp Knife
  • Heat Resistant Glass Kettle/Stainless Steel Pot
  • Huge Stainless Steel Strainer
  • Masher/Spoon

Ingredients
  

  • ½ Cup Or 4 Ounces Of Seedless Dried Jujubes Red Dates
  • 2 tbsp or 1 Ounce Ginger Peeled And Thinly Sliced
  • 1 Cinnamon Stick
  • Pine Nuts Tips Removed
  • 6 Cups Of Water
  • 4 tbsp Of Sugar Optional - Honey or Brown Sugar

Instructions
 

  • First, wash the dried jujubes in cold running water to make sure it's free of dirt.
  • Using a sharp knife, finely chop the dried jujubes and put them into a heat-resistant glass kettle or you can even use a stainless steel pot.
  • Next, add the cinnamon stick, ginger, sugar, and water. Cover the lid and then cook it over low to medium heat for about 25 to 30 minutes. Remember to crack open the lid as it might easily boil over.
  • Bring the heat to low flame and let it simmer for another 30 minutes. And then, remove it from the heat.
  • Pour everything through a huge stainless steel strainer over a bowl. Using a masher or a spoon, mash down the solids to allow the jujube pulp to penetrate through the strainer.
  • Lastly, pour the strained tea into the pot or kettle and reheat. Now, pour into cups and sprinkle some pine nuts. And your jube tea is ready, enjoy!

Notes

  • To make your jujube tea experience more pleasurable, ensure that there are no large chunks of jujube. It should be evenly ground into tiny bits of minced jujube. In this case, you can use a food processor instead of a masher. 
  • If you want to store it, do store it in an airtight container. Place it in your refrigerator and it will last a long time. 
  • You can adjust the sweetness according to your liking. 
  • You can enjoy it as a cold beverage in summer as well, by not reheating it. But refrigerate it for at least 1 hour and your cold jujube tea is ready.
