Ingredients

  • 4 Mangoes
  • 1/2 tsp cardamom powder
  • 1/2 cup milk optional
  • Sugar as per taste
  • Water as needed

Instructions

  • Cool four mangoes in the refrigerator for several hours.
  • Rub the fruit with your hands while leaving the peel on. After that, extract the pulp using pressure. (Add sugar to the mixture only if necessary.)
  • Add cardamom powder and milk.
  • Using the blender, thoroughly combine the ingredients, then add water in an amount determined by the desired consistency of the aamras.
  • Rest it for a few hours. Serve it with hot puris and garnish with slivered almonds and pistachios.

Notes

  • The mangoes that have begun developing wrinkles are ideal for making aamras.
  • You may make a healthy version of this recipe by subbing powdered jaggery for the sugar.
  • Mangoes are hot and might cause body heat if eaten too much. To avoid this, soak mangoes for an hour before cooking with them. Mangoes release their heat into the water, making them safe to eat.
  • If you want to change things, give AamRas a little zing by mixing saffron threads and cardamom powder. It has a fantastic flavor.
