- Pineapple 10-15 chunks of pineapple
- Curd 2 1/2cups of curd
- Sugar/Honey 2/3 cups of sugar P.S. I am being a little generous here!
- Salt Pinch of salt to balance the taste
- Water 2-3 tablespoon for smooth blending
- Ice cubes 3-4 cubes
- Mint leaves: 3-5 leaves
- Lemon juice: Squeeze a lemon to extract the juice
- Chopped cashew nuts 2 tablespoons
Use a blending jar and add the curd, pineapple chunks, water sugar/honey, salt, lemon juice, ice cubes and mint leaves.
Blend until smooth, you can check with a spatula for any chunks or granules. If present, blend properly until your lassi is smooth as butter!
Pour the lassi in glasses, garnish with chopped cashew nuts and a chunk of pineapple and voila!
You can enjoy your chilled pineapple lassi alone, or with family, as a dessert or as a refreshment drink! Make your summers lassi-some!
