My mother makes a cup of hot jaggery tea for me, and I love the way she prepares it! And yesterday, I was sitting on my balcony and enjoying my jaggery tea and suddenly thought of sharing this recipe with you all.

During winters, gud ki chai is prevalent in northern parts of India, specifically in Maharastra & Uttar Pradesh. I love sipping hot beverages during winter, such as Peanut Butter Chocolate Milk, Kashmiri Kahwa, Rose Milk Tea and many more. Jaggery tea, or Gud Ki Chai, is a traditional Indian tea drink which is prepared using jaggery and other spices. A great way to keep yourself warm during winter!

  • Tea Strainer

Ingredients
  

  • 1.5 Cups Of Milk
  • 2.25 Cups Of Water
  • 6 tsp Jaggery Powder
  • 6 tsp Tea Leaves Of Your Choice
  • 1.5 tsp Dry Ginger Powder
  • 3 Green Cardamoms Crushed

Instructions
 

  • Into a saucepan, add water, crushed cardamoms and dry ginger powder over low to medium heat. Bring it to a boil.
  • Next, add the tea leaves and let them simmer for about 4 to 5 minutes.
  • Add the milk and give a nice stir. Allow it to simmer for 2 to 3 minutes. Using a tea strainer, strain the tea.
  • Now add the jaggery powder to the tea and mix well.
  • Serve the hot jaggery tea immediately!

Notes

  • You can use non-dairy products to make this jaggery tea, such as almond milk, soy milk, oats milk, etc. Do not boil the non-dairy kinds of milk; just let it simmer gently to attain that frothy texture.
  • You can make use of any type of jaggery, such as palm jaggery or date palm jaggery; anything is fine.
  • Also, you are free to adjust the quantity of jaggery according to your taste preferences.
  • If you prefer your tea to be of strong flavour, then let it brew for a longer time.
  • Adding jaggery to the hot milk curdles the milk because of the acidic nature of jaggery. To prevent this, follow the steps mentioned above properly.
  • I prefer using strong Assam tea leaves to make a cup of hot jaggery tea for myself. However, you can use tea leaves of your choice.

It is best to consume jaggery right after it is served, but if you would like to store it, then refrigerate your jaggery tea in an airtight container for 24 hours and not more than that! Remember that after a few hours, the taste might vary.
